香肉卷 Banana Meat Roll

1. 将鸡胸肉切片 Cut chicken breast into slice.
2. 放一些胡椒粉腌制 Pickle the meat with pepper powder.
3. 再放一些蛋白腌制,然后放在冰箱大约15分钟  Pickle the meat with egg white and put into refrigerate about 15min.
4 & 5. 剥开香蕉皮,用鸡胸肉包着香蕉肉A banana skin peel off, wrapped a banana with chicken breast 
6. 沾一些Ayam Brand的炸鸡粉 Dust banana & meat with Ayam Brand Fried Chicken Powder
7. 油炸 Fried it
8. 过滤油就能吃了

免烘蛋挞 Non-baked Egg Tart

안녕하세요 Anyeo~ 
今天“又”心血来潮
想来一些“小挑战”
              就是...
电磁炉(Induction Cooker)蛋挞


我们的完成品^.^
平时,我们在网站看到的,
多数是用烤箱弄成的,
因为我们家没有T.T
所以呢..
我们只好用这个方法了...

材料如下:
蛋挞皮(现成)Pastry Puff (Kawan brand)
淡奶油180g Whipping Cream (Anchor brand)
牛奶140g Milk (Dutch Lady)
细砂糖80g Sugar
蛋黄4粒 Egg Yolk
低筋面粉15g Cake Flour
炼乳15g Evaporated milk(F&N)
蛋黄1粒 (刷塔皮) 1 Egg Yolk for brushing tart skin

方法如下:
Process:
1.淡奶油、牛奶、炼乳倒入小锅里,然后慢慢将糖放入锅里,用小火煮至糖溶化同时慢慢搅拌。
Put Whipping cream, milk, evaporated milk and sugar into a bowl stirr evenly. Then, using low flame to make sugar dissolve.


2. 待step 1的“混合物”冷后,加入蛋黄与低筋面粉入step1的小锅里搅匀。
After the bowl cold, add egg yolk and cake flour into the bowl (step 1)and stirred evenly.
过后,用筛子过滤渣物(建议过滤两次),然后放在一旁.
Then, filtrate the mixtures by using griddle (recommend 2 times) and set aside.


 3. 拿出一片塔皮(现成的),用模具压出形状,然后按压入模具。(如下图)
Take out a piece of pastry puff, use tart mold  pinching-out a shape as the following.




4. 用预先准备的蛋黄,刷在塔皮上,倒蛋挞液入蛋挞皮,然后拿去“烘”。
Brushed egg yolk on tart skin, pour tart liquid into tart skin then put on the pan for "baking".
*放油在底部(我用玉蜀黍油)然后盖起来烘大约20分钟。(电磁炉的800度)
*Put corn oil on the bottom, then cover it for baking about 20min (induction cook: 800 Celsius)

水晶樱桃蛋挞 Crystal Cherry Egg Tart (免烘炉Without using oven)

今天在网上看到一个网友所post的信息...
觉得蛮新奇的...
想分享给大家...




用料:
1挞皮:澄粉60g、生粉(太白粉)25g、1大匙、色拉油1大匙、热水85ml
Tart Skin: Wheat starch 60g, Corn Starch 25g, Sugar 1table spoon, Salad oil 1table spoon, hot water 85ml
2挞液:鸡蛋1个、糖2大匙、热水80ml
3调料:樱桃
Tart filling: an egg, sugar 2 table spoon, hot water 80ml
Flavouring: Cherry

做法:
(一):澄粉,生粉,糖混合均匀
Mixed wheat starch, corn starch and sugar into bowl evenly.
(二):加入热水,边搅拌边和成团
Add water  (with step 1) into bowl, stirr it and become dough.
(三):加入色拉油,揉成软滑的面团
Add salad oil into bowl, rub with hands become dough.
(四):案板上搓长面团,面团切小段放入模具
Rub long the dough on the cutting board, cut small slice and put into tart mold.
(五):捏成紧贴模子均匀厚薄的胚子
 Pinch close to mold evenly.
(六):鸡蛋打散,倒入晾凉的糖+水里(2大匙糖和80ml热水),搅拌均匀
Stirr the egg evenly and pour into 80ml of hot water with 2 table spoon of sugar.
(七):把(六)用筛子过滤后,舀入模具9成满,用中火熬10分钟左右取出
Filter step 6 by using griddle, pour into mold (90%) and use moderate heat to bake about 10 minutes.
(八):凉后脱模,用樱桃碎粒点缀即可
Demold after cold, put some cherry on the tart.

小贴士:
1.和面的水最好是刚烧开的开水,这样有利于粉成团
2.如果加热水后,面团过于稀软,可放入微波炉加热,使面团硬挺便于揉成团不宜多加粉量,以影响口感
3.我用电磁炉蒸的,先是6分钟蒸煮,再是4分钟火锅(60)档.挞皮变成透明色,蛋液用勺子试舀,跟蛋羹差不多,就证明蛋挞可以出锅了...

Hello Kitty模具 Hello Kitty Mold

let's start~


1. 开小火融化巧克力。
Melting Chocolate (low flame). -- 
 










2. 倒入Kitty模具中,然后放入冰箱冰冻大约1小时。
Pour into Kitty mold & refrigerate about 1 hour.


倒数时间...Let us Countdown...
3...2...1...

水果冰皮月饼Fruity Mooncake 8 steps (简易篇)

这就是我们的成品了^.^
酱!酱!酱!
用水果做成的....
里面的内馅是Cookies and Cream Ice-cream哦(最后的图片,黄色冰皮)
Our result is come out~~ Jiang ~ Jiang~ Jiang~
Inner filling is cookies and cream ice-cream as I like to eat (Last picture, yellow color)

材料如下:
Materials:

- 火龙果/龙珠果(purple dragon fruit)
- 蓝莓(Blue Berry)
- 糕粉 80gm (Hong Kong Kow Fun)
- 糖分 60gm* (Icing Sugar)
- 白油 1table spoon (Shortening)
- 玉蜀黍油 1 table spoon (Corn oil)
- 冰水/牛奶 100gm (Ice Water / Milk)*
- 香叶馅 80gm (Pandan Filling)
*看情况而定
*depends
Recommend: Kow fun 115gm, Icing Sugar 250gm, Shortening 1 tb spoon, Corn oil 1tb spoon & Milk 150gm


做法如下:
Step:
1.将龙珠果切颗粒。
Red dragon fruit cut slice.









                                                                           

2. 测量糕粉80gm、糖粉、玉蜀黍油、白油的分量,然后倒入大碗。
Measuring "Kow Fun", Icing sugar, Corn oil & Shortening, then pour into bowl.
                                                                           

3. 慢慢将牛奶倒入大碗,同时搅拌均匀。(直到面团凝固)
Milk pour into bowl slowly, and stir all evenly.  (until the dough become solid)


4. 搽上糕粉(煮熟的糯米粉)在手上和砧板上。*旋风掌*
Applied some "Kow Fun" (cooked glutinous rice flour) on the hands and cutting board.
                                                                     
      
5. 将搓好的面团放在砧板上,均匀地压扁。
Rub dough  on the chopping block and flat it evenly.
 

6. 切香叶馅80gm,然后搓圆。
Cut 80gm of Pandan Filling, then rub with the hands become circle.


7. 将馅放在冰皮(刚刚搓的面团)上,然后将冰皮往上推直到完全裹着馅料。
Put filling on the snowy skin. Then,pushed up the crust (snowy skin/bing pi) slowly by hand until completely filling wrapped up.


8、将包好的冰皮放入月饼模具中,压实。
Wrapping the snowy skin with pandan filling into the moon cake mold.

冰皮月饼(Snowy skin Mooncake) - Cooking煮食篇

趁这个机会,
我想让各位看看一首诗...
“入厨光夺霜,蒸釜气流液.
揉搓细面尘,点缀胭脂迹.
戚里相馈遗,节物无容忽.

玉食皆入口, 此饼乃独绝.

(The following information I took from other people and the next article will show out our works) 我们常常吃到传统月饼(烘培的月饼),如果在家里做但是家里又没有烘炉,怎么办?
那我们来尝试一下制作冰皮月饼吧~~ ^.^
let us try to make snowy skin mooncake (bing pi yue bing)
(口味:芝士、绿茶、椰子、可可)
(flavor: Cheese, Green Tea, Coconut & Coco)
材料如下:
Material at the following:
可以做63g月饼模8个,我用的是8头月饼模具。
冰皮(Snowy Skin):糯米粉(glutinous rice flour) 45g、
粘米粉(rice flour) 35g、
澄面(小麦淀粉 wheat starch)20g、
牛奶(Milk)185g、
糖粉(Icing Sugar)50g、
色拉油(salad oil) 20ML、
吉士粉2茶匙 10ml (Cheese powder/Custard powder 2 teaspoon/10ml)、
绿茶粉2茶匙 10ml (Green tea powder 2teaspoon/10ml) 、
可可粉2茶匙 10ml (Cocoa powder 2teaspoon/10ml)、
椰子粉2茶匙 10ml (Coconut powder 2teaspoon/10ml)



1、将牛奶、糖粉、色拉油放入盆中混合均匀。
Milk, icing sugar, salad oil mixed into the pot.


2、混合糯米粉、粘米粉、澄面倒入牛奶液中混合均匀。
Mixing glutinous rice flour, rice flour, wheat starch into the milk mixture evenly.

3、将搅拌好的面糊放置30分钟,然后放入蒸锅中蒸熟,大约15-20分钟。将蒸好的面糊搅拌均 匀,放凉。

4、将蒸好的粉团分成四分,分别混入椰子粉、吉士粉、绿茶粉、可可粉和匀,做成四种颜色的粉团。
